Spaghetti Carbonara
Here is the recipe for Spaghetti Carbonara in case you want to try it. I found the recipe on Parents.com. Enjoy!
1 pound of spaghetti
8 ounces of pancetta or thick sliced bacon
2 large eggs
2 large egg yolks
1 1/4 cup (5 ounces) of grated Romano cheese
Salt and pepper to taste
1. Bring a large pot of salted water to boiled. Place the pasta in it and let it cook 10 - 12 minutes or until al dente.
2. While the pasta is cooking heat a large skillet over medium high heat. Add the pancetta ( or bacon) and cook about 6 minutes or until crispy. Remove all but 1 tablespoon of fat.
3. Reserved 1/2 cup of the pasta water, and then drain the pasta. Add the pasta to skillet and toss to combine.
4. In a large bowl mixed the eggs with the egg yolks. Turn the heat off under the skillet and add the eggs along with 1 cup of cheese. Toss to combine. Add the pasta water to the sauce to thin out the sauce if necessary. Sprinkle with remaining 1/4 cup of cheese and enjoy.
