Well this stinks, sort of.

So it has been three days since my post. Wanna know why? I have the stinken flu. I feel pretty much like I have been hit by a parade of Mac trucks. Thankfully the kids are not showing signs of being sick. I hope that it stays that way. But I have to say there is something to be thankful for. Today my two very good friends helped me out. Audrey had sent me an email with some tips on how to feel better. Then my friend Camille surprise me with dinner. Even though I still feel like a parade of Mac trucks hit me, these two gestures made me feel so good. I am so very blessed to have such wonderful friends in my life.

Last day of winter recess

Well today is Nicky's last day of winter recess. He did get two extra days than the rest of his class. Four days before Christmas, I woke up to the sound of Nicky barking like a seal. Yes it was the croup. With his asthma going on crazy this year, I decided to listen to my mommy gut feeling and keep him home for the two days before winter recess. Of course, when one child gets sick, they all get sick. Thankfully we had our trusty Nebulizer on hand, and allergy medicine. As I am typing this right one, Nicky no longer sounds like a seal, and the little girls are doing well on their antibiotics. It was nice to have Nicky home for awhile. I enjoyed hanging out with him. Of course he became bored rather quickly, but it was fun to have him home. Tomorrow he will wake up, have breakfast and get ready to go to go school. I'm glad he is excited to go back, but I'm also a little sad. Nicky is growing up. He is already in first grade, and he is doing amazing. I am so proud of all his academic accomplishments, but I also realize he is no longer a baby. He s a big boy right now. I truly do look forward to what the future holds for Nicky, and what he will become. But sometimes I wish I could have him stay the age he is right now. I know I know,that is selfish to say, but I miss my little doodlebug.

Spaghetti Carbonara

Here is the recipe for Spaghetti Carbonara in case you want to try it. I found the recipe on Parents.com. Enjoy! 1 pound of spaghetti 8 ounces of pancetta or thick sliced bacon 2 large eggs 2 large egg yolks 1 1/4 cup (5 ounces) of grated Romano cheese Salt and pepper to taste 1. Bring a large pot of salted water to boiled. Place the pasta in it and let it cook 10 - 12 minutes or until al dente. 2. While the pasta is cooking heat a large skillet over medium high heat. Add the pancetta ( or bacon) and cook about 6 minutes or until crispy. Remove all but 1 tablespoon of fat. 3. Reserved 1/2 cup of the pasta water, and then drain the pasta. Add the pasta to skillet and toss to combine. 4. In a large bowl mixed the eggs with the egg yolks. Turn the heat off under the skillet and add the eggs along with 1 cup of cheese. Toss to combine. Add the pasta water to the sauce to thin out the sauce if necessary. Sprinkle with remaining 1/4 cup of cheese and enjoy.

Happy New Year! I hope your New Year's eve was exciting and you spent it with the ones you loved. New Year's Eve in The Meshach House was a blast. The kids and I decided to have a little party, and my son, Nicky was the party planner. He decided that the theme for the night was "A Dark Party". I'm not to sure where he came up with this idea, but trust me he had a vision. We had purchase some glow sticks at the local dollar store, along with a few noise markers and party hats. One we arrived home, I was informed by the host that we needed to eat dinner at once. The year before I had made a party platter of finger foods. The kids were less than impressed, and asked for peanut butter and jelly. So this year I decided not to make a special platter and stick to just a dinner. I found this recipe for Spaghetti carbonara and thought it looked good. Well, out of five people in the household three like it. Avery devoured it, but then again Avery eats everything. I thought it was deliciou, and even Jay like it. My hubby can be a picky eater sometimes. As for Lacey and Nicky, well Lacey's exact words were "This smells", and Nicky ate about three bites and declared he was full. After a quick change into our party gear ( also know as pj's) we were to the playroom. Nicky had made sure all the lights were out, and just the t.v was on. I should mention now that my children love to dance. They will dance to any and all types of music. So the music channel was set to party favorite and the dancing began. They had a blast. To see the pure joy on faces, and to hear their laughter was amazing. I really just sat back and enjoyed the moment. The best part was Jay came home during the party. The kids were so excited and thrill to see him. They were showing off their dance moves, and encouraging Daddy to use the noisemakers. The big party lasted to 8 p.m. The kids were exhausted and gave us no problems at bedtime. As for me, I also went to bed right after them. The next morning, my husband inform me that he did try to wake me up for our New Year's kiss, twice. Apparently I was very tired and did not move, but told him "To go eat spaghetti".
